Easy & Delicious Kombucha Recipes
In a recent article on CoSozo, I discussed the long history and numerous health benefits of Kombucha. In this article I’m going to share some of my favorite recipes for bottling this tasty beverage at home.
 
Home brewing Kombucha is incredibly simple and cost effective. Once you have the supplies, you can make a gallon of Kombucha for just a few dollars, or roughly the cost of 1 cup of sugar and a few ounces of tea. With the average cost of a single bottle of Kombucha in the grocery store sitting around $4.00, home brewing Kombucha is quickly gaining popularity as an inexpensive (and, dare I say, fun!) hobby. 
 
Unlike home brewing beer, which can take months from start to finish, Kombucha takes just a few weeks. After the initial brewing stage, typically lasting between 7-21 days, the beverage is then poured into bottles to sit for an additional 2-4 days in what’s called “the second fermentation.” It’s during this time that Kombucha gets its well-known fizz and wide array flavors. Carbonation is created as the bacteria and yeast feed on sugars in the drink and create CO2 in the process. Using bottles with an airtight lock, such as swing top bottles, are important to building up a high level of carbonation.
 
One of the many wonderful things about Kombucha is that it can be mixed with a large variety of flavors, masking its sometimes-strong vinegar taste and making it a bit of a carbonated chameleon.
 
For a healthier version of the classic cherry limeade, bottle your Kombucha with fresh cherry juice and a squeeze of lime. Add a few frozen berries from the freezer, some grated ginger, and a splash of lemon juice to your home brewed Kombucha, and it will taste just like GT Kombucha’s top selling flavor, Gingerberry.
 
Feeling adventurous? Start mixing in fresh herbs to your Kombucha. Lavender-mint makes a delicious and refreshing combination in the summertime, while turmeric, lemon, and ginger are a delicious trio that can be a powerful immunity booster as the seasons begin to change.
 
Check out some of the recipes below and maybe even try your hand at it. You may just surprise yourself with how simple brewing Kombucha can be. 
 
 
All recipes are for making one 16 oz. bottle. Be sure your Kombucha culture is removed from brewing jar and set aside in 1-2 cups of plain Kombucha before bottling.
 
 
Directions:
  1. Using a plastic funnel, pour your brewed Kombucha into 16 oz. glass bottles with tight fitting lids, leaving 1 inch of space at the top.
  2. Follow recipes below to add your favorite flavorings to each bottle.
  3. Seal the bottles and store in a warm, dark place for 2-4 days.
  4. After a few days, move your bottles to the refrigerator.
  5. Once chilled, pop the top and enjoy your very own home brewed Kombucha!

Very Berry
2-3 blueberries
2-3 raspberries
1 Tablespoon chopped strawberries
1 teaspoon chopped ginger
 
Cherry Limeade
2 -3 Tablespoons cherry juice
1-2 teaspoons lime juice
 
NessAlla Kombucha Seasonal Favorites
 
Lavender Mint
1 teaspoon dried lavender or lavender extract
1 Tablespoon chopped mint leaves
 
(If you wish, strain out the mint and lavender before drinking)
 
Fall Seasonal
1 teaspoon turmeric
1 Teaspoon chopped ginger
1 Tablespoon lemon
 
Grape Soda - From FermUp host Branden Byers
 
1 Tablespoon grape juice concentrate
 
(Try to find an all natural, organic juice concentrate as non-organic tend to have a lot of added sugars and fillers.)
